Are you feeling some Chinese takeout but not feeling the copious amounts of calories and fat grams that come along with it? BOY HAVE I GOT A MEAL FOR YOU! (sound car-salesmany enough yet?)

The Best Damn Marinated Beef You’ll Ever Have

So before we get started, I must admit to you that this “Best Damn Marinated Beef You’ll Ever Have” recipe is one I found online about 2 years back. I brought it to my Mom’s house and made it for her for mother’s day one year and ever since she’s been hooked. UNFORTUNATELY I have not been able to find the sucker online ever since. So now we simply rely on this green piece of paper attached to the fridge with a powder blue mitten magnet and I have absolutely no link to credit this unbelievable recipe to.

SO…if this is YOUR recipe out there, I give you full credit. In no way shape or form do I take credit for what I swear is The Best Damn Marinated Beef You’ll EVER Have:

Ingredients:
1 1/2 lbs flank steak, thinly slice against the grain
5 Tablespoons soy sauce
2 1/2 Tablespoons white sugar (or honey)
1/4 Cup chopped green onion
2 Tablespoons minced garlic
2 Tablespoons sesame seeds
2 Tablespoons sesame oil
2 teaspoons ground black pepper

1. Place beef in shallow dish. Combine rest of ingredients in small ball and pour over beef. Cover and fridge 1 hour or overnight
2. Grill those suckers and eat ‘em right up!

The other recipes are ones I found today so I am completely able to give their original makers their credit.

Vegetable Lo Mein

The only thing I did differently on this guy is I switched up the veggies. Here are the cute little guys I used:

(Green Pepper, Carrot, Onion, Green Onion, Mushrooms, Baby Corn, Broccoli)

The outcome is absolutely a yummy substitute for the high calorie option. It’s spicy, hearty, and delicious.

Asian Slaw

My parents RAVED over this one. It’s so easy, especially when you make it with the beef, because many of the same ingredients are used but the outcome is completely different texture and temperature.

MAKE IT.

In fact…MAKE IT ALLLLLLLLLLLLLLLLLLLLLLLLLLLLLLLLLLLL!

Sooooo yea. After I weighed myself I was kinda sort a lotta bit bummed. How long have I been at this “Get Fit Goal”? I was down 7lbs in the first week and now this? Really? Then I realized…ya know what? Get over it.

I always tell the girls I coach after a sh*tty first half, “It’s over, it’s done! There’s nothing you can do about it now accept use it to fuel your second half. You can’t fix yesterday but you can always improve tomorrow!”

Dear Katy, take your own advice. So I am. I can’t dwell on what happened last week or the weeks before that. All I can do is worry about TODAY. What will I do today to stay on track?

We will always have off days, off weeks, and off months. There is no doubt about that. The only time they become a problem is when our past negatively effects our future. I could say “well I’ve already crapped the bed on this ‘Get Fit Goal’ this time around” or I could say “I have a few more weeks to do the BEST I can”. I choose the latter.
